Chef de Cuisine

We are looking for a highly skilled and creative Chef de Cuisine with experience in luxury resorts or 5-star hotels to lead our culinary operations. This role is responsible for overseeing the entire kitchen, ensuring the highest standards of quality, taste, and presentation across all dining outlets. The Chef de Cuisine will manage menu development, supervise daily kitchen activities, and lead a diverse culinary team with passion and precision.

The ideal candidate will have strong expertise in international cuisines, modern culinary techniques, and menu innovation, while also showcasing a deep appreciation for local and seasonal ingredients. They should possess excellent leadership and organizational skills, with the ability to inspire, train, and motivate the kitchen brigade. A strong understanding of food safety, hygiene regulations, as well as solid financial acumen to manage budgets, food costs, and inventory efficiently.

Key responsibilities include creating innovative menus, ensuring consistency in quality and presentation, collaborating with Executive Chef and Food & Beverage management on special events and banquets, monitoring guest feedback, and continuously elevating the culinary experience. The Chef de Cuisine will also play a crucial role in developing the culinary team, maintaining operational efficiency, and upholding the resort’s reputation for excellence.

Key Responsibilities

  • Lead, train, and motivate the culinary team to deliver world-class cuisine and service.
  • Develop innovative menus that highlight local ingredients, international flavors, and seasonal specialties.
  • Ensure consistent quality, taste, and presentation across all resort dining outlets.
  • Oversee food preparation, portioning, and waste management while maintaining cost control.
  • Collaborate with Executive Chef to design unique culinary concepts for events, banquets, and VIP guests.
  • Ensure compliance with health, hygiene, and safety regulations.
  • Manage food inventory and ordering to guarantee freshness and efficiency.
  • Monitor guest feedback and continuously enhance the culinary experience.
  • Control kitchen budgets, monitor food costs, and implement effective cost-saving strategies.

Requirements

  • Proven experience as an Executive Chef (preferably in a luxury resort or 5-star property).
  • Strong leadership and organizational skills with the ability to manage diverse teams.
  • Expertise in international cuisines and modern culinary techniques.
  • Creative and passionate about food trends, presentation, and innovation.
  • Excellent knowledge of food safety, hygiene, and HACCP standards.
  • Strong financial acumen and experience with budget management.
  • Ability to work under pressure and in a fast-paced environment.
  • Degree/Diploma in Culinary Arts or equivalent professional training.
  • Fluency in English; additional languages are an advantage.
