The Stewarding Manager is responsible for overseeing the stewarding department, ensuring the highest standards of cleanliness, hygiene, and organization in all food and beverage areas. This role involves managing stewarding staff, coordinating cleaning schedules, maintaining kitchen equipment, and supporting culinary and service teams to ensure smooth operations and compliance with safety regulations.
- Main Responsibilities
- Lead, train, and supervise the stewarding team to maintain cleanliness and sanitation standards in kitchens, dishwashing areas, and storage rooms.
- Develop and implement cleaning schedules and checklists for all food and beverage back-of-house areas.
- Monitor the proper usage and maintenance of cleaning chemicals and equipment.
- Coordinate with the Executive Chef, Chef De Cuisines and other departments to ensure operational needs are met.
- Maintain inventory of cleaning supplies, kitchen equipment, and stewarding tools; manage stock control and order as needed.
- Ensure compliance with food safety, hygiene, and occupational health standards (e.g., HACCP, OSHA).
- Oversee the maintenance and proper functioning of dishwashers and other kitchen equipment.
- Conduct regular inspections to ensure cleanliness and identify areas for improvement.
- Manage staff scheduling, attendance, and performance evaluations.
- Promote a safe, efficient, and team-oriented working environment Understand and apply the principal of HACCP program.
