Job Description

Position Summary: Responsible for supervising the day-to-day operation of the culinary department, while closely working with the Executive Sous Chef and Executive Chef. Works to continually improve guest and team member satisfaction while maintaining the operating budget. Assist with development and training of team to improve results while maintaining standards.

  1. Supervises culinary team members. Manages all day-to-day operations. Understands team members' positions well enough to perform duties in team members absence.
  2. Encourages and builds mutual trust, respect, and cooperation among team member.
  3. Ensures and maintains the productivity level of team members.
  4. Assist culinary team members in preparing all food items in an efficient and timely manner adhering to proper food handling technique and ensuring quality food standards.
  5. Follow recipes to control production and maintain consistency and freshness.
  6. Ensure efficient flow of food dishes with an emphasis on portion control, quality, presentation and temperature control.
  7. Supervises and coordinates activities of team members engaged in food preparation.
  8. Maintains food preparation handling and correct storage standards.
  9. Maintains purchasing, receiving and food storage standards.
  10. Supports procedures for food & beverage portion and waste controls.
  11. Follows proper handling right temperature of all food products.
  12. Ensures compliance with all applicable laws and regulations.
  13. Assist with inventory and production charts.
  14. Participates in training staff on menu items including ingredients, preparation methods and unique tastes.
  15. Provides services that are above and beyond for guest satisfaction and retention.
  16. Adhere to hotel grooming standards.
  17. Perform any additional tasks requested by management.

Education: No formal education required.

Experience: Three (3) years related experience.

Hours required: Scheduled days and time vary based on hotel needs. May be required to work weekends.

Skills & Abilities:

  • Knowledge of knife skills, sanitation and cooking methods. 
  • Knowledge of sanitation codes concerning food storage and cross contamination
  • Knowledge of proper cooking methods.
  • Ability to regularly life and/or move up to 50 pounds.

121 Room Hotel

Hyatt Centric Fort Lauderdale, currently under construction is slated to open in 2020. The 238 modern-designed guest rooms will occupy the first 15 floors of this multi-story high-rise condo-hotel building –121 luxury condominiums are for sale on the 16th floor and above. The hotel amenities will include 8,500 sq. ft. restaurant with a large exterior patio space at lobby-level, an indoor/outdoor bar seating area on Las Olas Blvd, an elevated pool with views of Las Olas River, 6,000 sq.ft. of meeting and banquet space, 24-hour valet service and an onsite parking garage.
